The official gastronomic selection
A whole day given over to
Basque specialities sounds tempting, doesn’t it?
Start with
Itxassou, a typical little village known for its production of
cherries and derivative products.
Continue on to
Saint-Etienne de Baigorry, a frontier village of great character in the
Navarre, nestled at the foot of the
Baigura mountain, to taste the powerful, generous wines of the
Irouléguy cellars.
The next stop is
Banca, to visit the
artisanal trout farm which benefits from the pure water of the
Arpea spring.
Finally, call at
Les Aldudes in the establishment of
Pierre Oteiza who, along with a few farmers from the valley of Les Aldudes, has
saved the
piebald pig breed.
These pigs, raised amidst the
oak, chestnut and beech trees, produce the famous
Aldudes ham.
