The classic Basque cake! In every family, a recipe is secretly preserved, handed down and cherished. But in Anglet, one address stands out for its unique recipe for Basque cake: Maison Pommiers, a bakery and patisserie run by chef Frédéric Pommiers.
Since 2005, Frédéric has been offering less sweet pastries in Anglet, highlighting seasonal produce and authentic flavors. His Basque cake, launched in 2015, is a true masterpiece, as much for its aesthetics with its Lauburu (Basque cross) shape as for its taste: a light, unctuous cream, subtly flavored, slipped into a crunchy, melt-in-the-mouth pastry. Available with cherry, cream or coffee, it's reminiscent of our grandmothers' cakes, with a perfect balance of never too sweet and never too heavy.
Its little plus? It's available in an individual format, ideal for those with a small appetite!
