Gâteau Basque from Maison Pommiers

Basque cake: what could be more classic, more simple, more traditional? In every family, a recipe is secretly preserved, handed down and cherished. But there’s one address in Anglet that all locals taste buds agree stands out for its Basque cake recipe: that of pastry chef Frédéric Pommiers!

In 2015, he brought out his own Basque cake, with a light, unctuous cream, subtly flavored, slipped into a crunchy, melt-in-the-mouth pastry in the shape of a lauburu, the four-headed Basque cross. With cherry or cream, it’s a perfect mastery of proportions, never too sweet, never too heavy, reminiscent of our grandmother’s cake. The little extra? It’s available in individual format, ideal for those with a small appetite!

Golden Shortbread by Maison Gautier

A new delicacy! Anglet Côte Basque has teamed up with Maison Gautier, voted France’s Best Bakery, to offer Anglo-Americans and lovers of the destination a new delicacy: “Sablés d’Or”, shortbread cookies with butter made in Anglet.

The recipe, designed by Maison Gautier’s two pastry chefs, Sylvain and Lucien, is enhanced by gold leaf. Their shape and color are reminiscent of Anglet’s eponymous beach. Sablés d’Or are presented in an elegant tin box, designed and illustrated by the talented Servane illustration, containing 16 cookies.

The Krakada at Maison Txomin

Echoing the sweet Basque snack, the Krakada is one of the specialties of Maison Txomin, an artisan ice-cream maker based in Anglet’s Chambre d’Amour between the Sables d’Or and Club beaches.

This waffle is a leavened pastry with vanilla and sugar sprinkles, made on the premises according to their secret recipe. It can be eaten on its own, or with handmade hazelnut chocolate, dark chocolate, caramel, dark chocolate filling, with or without whipped cream! A gourmet treat just the way you like it, to be enjoyed at any time of day!

Anglet sweet pepper

Also known as “piment doux du Pays Basque et du Seignanx”, it is classified as a vegetable and not as a spice as its cousin, the piment d’Espelette. Green, long and fine, its taste is similar to that of a bell pepper, but more subtle and better. When eaten raw, the product has a firm, crunchy texture, while when cooked, it has an intense taste and soft, slightly sweet flavors. It can also be preserved in vinegar to replace pickles.

After being grown in the open ground, under market gardening shelter or in the field, the pepper is picked by hand from May to October. In 2016, the Syndicat de défense et de promotion du Piment doux du Pays Basque et du Seignanx was awarded the label rouge! The aim of this initiative is to guarantee consumers traceability, compliance with Label Rouge production conditions, and product quality.

La Garbure Angloye

Since 1977, the Confrérie de la Garbure et du Piment Doux d’Anglet has been happily defending the town’s gastronomic tradition. This cabbage soup with vegetables and meats is found throughout the South-West, from Bigorre to Périgord, via Béarn, Landes and Gers.

In Anglet, it’s been on family tables for a very long time. The recipe varies from region to region, village to village and family to family. A peasant dish par excellence, it’s made with whatever’s on hand, according to the seasons.

For Garbure Angloye, you’ll find cabbage, turnips, potatoes, pumpkin, leeks, white beans, onion, garlic, a few bouquet garni herbs, Xamango (Bayonne ham heel), a little salt and a pinch of Espelette pepper.

At La Torref’, coffee is best enjoyed when it’s exceptional, meaning impeccable traceability and artisanal roasting carried out daily on site. In a relaxed setting, manager Thomas introduces visitors to the fundamentals of his fragrant world, in which the extraordinarily varied aromas of carefully selected beans are expressed.

Each bean has its own recipe and each customer its own type of bean“: the sweet, fruity flavours of Kyarumba from Uganda, the caramelized sweetness of La Cocha from Colombia, or the cocoa character of the confidential Anas Blue from Peru.

A drink for good: Datcha Kombucha

Created by Grégoire, Alexandre and Clément, 3 young men with a passion for good products, this trendy drink is alcohol-free, unfiltered and unpasteurized, lightly sweetened, refreshing and naturally sparkling, made from fermented teas or infusions. Matured in small glass jars, this drink is as gourmand as it is addictive.

Known for its many health benefits (detox, antioxidant, anti-inflammatory), kombucha is an ancestral non-alcoholic fermented tea-based beverage that appeals to the young, the sporty and the connoisseur alike…

Developed in a workshop in the heart of Anglet, near Maignon, a veritable laboratory where its creators experiment, share and deepen their knowledge of fermentations. Available in several flavors: pomegranate, lemon ginger, Osmanthus flower, toasted buckwheat.
